Christmas Bacon Stuffing

Hey everyone, hope you all had a wonderful holiday with your loved ones!

Part of the holiday season is all the yummy food, and this year I decided to try a new stuffing recipe I found on the FoodNetwork website. Let me start by saying that this is a rice based stuffing and it’s absolutely amazing!

The recipe is made to serve 8-10 people but I found that it halved pretty easily and nicely. I followed the recipe pretty closely but I did make a few small alterations and that’s what I will be sharing with you guys (for the original recipe you can clink on the link above).

Ingredients

4 ounces of maple-smoked bacon, chopped in half inch pieces

2 1/4 cups of chicken broth

1 1/2 tablespoons rosemary leaves

A little more than 1/2 cup of short-grain brown rice and wild rice

1 tablespoon unsalted butter, at room temperature

1 tablespoon extra-virgin olive oil

7 ounces of chopped onion

1/2 teaspoon salt

A little more that a 1/4 teaspoon freshly ground black pepper

6 ounces baby portobella mushrooms, thinly sliced

4 ounces brussels sprouts, thinly sliced

1/4 cup walnuts, whole or chopped (optional)

I started by cooking the bacon in a skillet over medium-high heat until crisp, then placed it on a paper towel to absorb the grease.

I then put the chicken broth and rosemary in a 3QT (2.8L) saucepan and brought it to a boil over medium-high heat. Once boiling I added the brown and wild rice, brought the heat down, covered the saucepan, and let it simmer for about 25 minutes (until all the water was absorbed).

While the rice was cooking I heated the butter and oil over medium-high heat in the same skillet used for the bacon. Once melted I added the onions salt and pepper and let it cook until the onions became a light golden color. I then added the mushrooms and brussels sprouts and let them cook for about 5 minutes.

Once the rice was ready I transferred the vegetable mixture in with the rice, added the bacon and walnuts then tossed to make sure all ingredients were well incorporated.

And we’re all done!

I highly recommend this dish, it’s easy to make and a sure crowd pleaser!!
